The Chef

Mateu Villaret
Chef & Owner, Masía
Mateu grew up with the great nature of Catalonia, surrounded by mountains and the sea. Since his childhood, he was curious about the food he ate at home, cooked by mum, from La Mancha (Madrid), and by dad, from Catalonia and by grandma, from Andalucia. It was natural that he chose his life to become a chef, sharing the beauty of the local cuisine with guests. He worked in top famous restaurants in Spain, Holland, Singapore. Then he got a chance to work in Hajime, in Osaka, one of the top gastronomic restaurants with Michelin 3 stars, which allowed him to get another chance to be the chef of the Catalan restaurant Maspi, also in Osaka. With its unique style of cuisine, Maspi's fame quickly spread, not only in Osaka but all over Japan. In 2022, he finally opened his own restaurant, MASIA, in Ginza, Tokyo.
Special Menu
Spain is one of the leading exponents of the Mediterranean diet, based on the use of olive oil, fresh vegetables, other fresh seasonal foods and a unique fusion of tradition and innovation. This healthy, flavourful mixture has earned Spanish cuisine UNESCO Intangible Cultural Heritage status.
In the past 20 years, Spanish chefs and sommeliers have earned also international culinary recognition inside and outside of our borders. In line with this appreciation, the Spanish Chamber of Commerce is happy to announce that the menu of this year’s gala dinner has been designed in collaboration with Mateu Villaret, Chef and owner of the Michelin Guide restaurant Masía, in the heart of Ginza.
Chef Mateu’s curated menu blends locally fresh sourced ingredients with the finest Spanish flavours, offering a tempting array of flavours, in a Mediterranean-inspired experience. This menu promises a culinary journey, expertly crafted for a memorable dining experience.
In the menu creation process, Chef Mateu has counted on the support of Moralejo Seleccion, a renowned lamb meat producer celebrated for its exceptional taste, tender texture, and unmatched juiciness.
The involvement of SpCCJ member Riquisimo, along with its associated brands like Salanort (artisanal anchovy producer), Quesos Cerrato (cheese maker), and Dani (canned food), adds an extra layer of expertise and authenticity to Chef Mateu’s curated menu. This collaborative effort ensures that the menu not only showcases the best of Spanish cuisine but also incorporates high-quality, artisanal products from trusted producers. It’s a true celebration of the diverse and rich culinary traditions that Spain has to offer, with each ingredient carefully selected to enhance the dining experience.
